With aluminum cores enclosed by stainless-steel layers, Calphalon's Tri-Ply pots and pans deliver the attributes of both metals. The aluminum cores conduct heat quickly and uniformly across the pots and pans' bottoms and all the way up their sides. The durable, 18/10 stainless-steel interiors and exteriors are easy to clean, resist scratching, denting, warping, and corrosion, and are nonreactive to acidic food. This 3-quart, round-sided chef's pan has a domed, glass lid so cooking can be monitored without releasing heat. The lid is oven-safe to 450 degrees F, ensuring the pan not only can be used atop the stove for sauces, deep-frying, and stir-frying but can go into the oven for braising and stewing. The handle stays cool on the stovetop. The pan's rim is flared to facilitate dripless pouring. Tri-Ply cookware is polished to mirror-finish outside for beauty and wears a satin-finish inside to conceal inevitable utensil marks. love this skillet. It's nice & thick, even cooking, and stainless where the food is cooked. Nice, Nice! Love the lid with it too. It's oven safe- up to 350 degrees or so.

Totally pleased with this pan. Highly recommend it. Heats evenly. Doesn't scorch easily. Makes whisking sauces a breeze. We've even used it for grits (we are in the SOUTH). This is my first Calphalon Tri-Ply and I will be adding others to our kitchen.

I own almost the entire tri-ply line by Calphalon. This is a great addition to add to my collection. I use this pan primarily for risotto and polenta (which require constant stirring) and this does the job. The sloped sides make a somewhat tiresome task of getting food out of the corners of a straight-sided saucepan a heck of a lot easier. Believe me, I've made both risotto and polenta in my 4 1/2qt. and it was a chore. Like the rest of the pieces, this pan has a full aluminum core up the sides to ensure overall even heating. It cleans beautifully (use some Barkeeper's Friend for those stubborn hard water stains) and it will stay as gleaming as when you took it out of the box. After this piece I still yearn for the new handled stir-fry pan, the 5qt. saute (in my opinion, the holy grail of the tri-ply line), and possibly the 8qt. stockpot for bigger jobs. This pan, and this whole line of cookware, just cannot be beat in beauty, function, and price.
